  Most of us suffer from one tummy symptom or another…  some of the most common being bloating, cramps, pain, diarrhoea and constipation which can lead to more chronic illnesses. No matter how much we seem to diet or eat what we think is right for us, even combining it with our healthy lifestyles, our tummies are not listening. they seem to have a mind of their own. These delicious, nutritious VEGAN and GLUTEN FREE EGGPLANT PATTIES are so simple you won’t believe how tasty they are until you try them for yourself!! – Recipe Courtesy of WHOLISTICALLY HEALTHY  

Ingredients

1 eggplant cut into cubes 1 onion, finely chopped 2 cloves of garlic crushed 1 handful fresh herbs – I used dill, basil, parsley, and oregano 1 cup almond meal Handful of pumpkin seeds Salt and pepper to taste Good quality cold pressed cooking oil  

Procedure

In a frypan, warm a little oil and add onion, sautéing until translucent. Add garlic and eggplant, cook a further 10 minutes, stirring occasionally until the Eggplant is soft to touch and cooked through.   Now, transfer the eggplant mixture to a food processor, add the fresh herbs as well.
