Apricot & Orange Fool

December 22, 2015

A perfectly light pudding that is unbelievably easy to make.  For those of you who find it hard to make desserts, try this; it’s foolproof! Other fruits can be used if you prefer – the choice is yours.   1 tablespoon almonds 150g dried apricots 1 tablespoon honey 2 oranges, peeled 50g plain low-fat yogurt 1 tablespoon brown sugar         Serves 4   Toast the almonds in a dry frying pan until golden (keep a close eye on them as you don’t want them to burn), set aside. Put all the ingredients except the almonds in a food processor and whizz until smooth.  Transfer to serving bowls (or fancy glasses) and chill in the fridge until needed. Top with the toasted almonds to serve – (garnish with a sprig of mint if you have it)   Per serve – 151 KCALS, 2.2g FAT, 0.4g saturated fat, 0.04g sodium   Reference:  https://vasi.com.au/product/healthy-eating-for-lower-cholesterol/
