A perfectly light pudding that is unbelievably easy to make. For those of you who find it hard to make desserts, try this; it’s foolproof! Other fruits can be used if you prefer – the choice is yours. 1 tablespoon almonds 150g dried apricots 1 tablespoon honey 2 oranges, peeled 50g plain low-fat yogurt 1 tablespoon brown sugar Serves 4 Toast the almonds in a dry frying pan until golden (keep a close eye on them as you don’t want them to burn), set aside. Put all the ingredients except the almonds in a food processor and whizz until smooth. Transfer to serving bowls (or fancy glasses) and chill in the fridge until needed.
