Cinnamon

Cinnamon is a spice that is made from the inner bark of several trees called Cinnamomum. Its medicinal benefits have been used throughout history, as far back as the Ancient Egyptians. There are two types of cinnamon: first Ceylon Cinnamon (Cinnamomum verum): known as true cinnamon, and Cassia or Chinese Cinnamon (Cinnamomum aromaticum): which originates from China and is generally less expensive.

Ceylon cinnamon is more popular and safer to use due to the low levels of Coumarin as opposed to Cassia cinnamon found in most stores. Coumarin in high doses can cause liver damage. Cassia cinnamon is more effective in lowering blood sugar levels though. Due to its anti-clotting properties, you must be careful not to use with or as well as any other blood thinners.
